    However, when organic soy is fermented, as with natto, miso and tempeh, the fermentation process neutralizes the undesirable effects of phytic acid. The fermentation process, especially in natto, is also what produces the high levels of vitamin K2 that are so beneficial for bone health.

    Since soy is a major allergen for many people and because most soy today is GMO, we decided to source our vitamin K2 from natto made from chickpeas. Fermented chickpeas produce the same high levels of vitamin K2 without the soy allergen concerns that many people face.
